Family Tradition

When I was a little girl, I can remember my Grandma McCleery making this homemade chocolate cake that all of us grandkids LOVED!!  Grandma would make the cake, along with her own frosting, and then it always sat on top of the stove in the dish.  Every year someone would ask Grandma to make this cake for their birthday, holiday, or simply just because!  The best part about this cake... I don't think any of us knew what was in it until we were older, much older and you will understand why in a minute! :)

So my dear friend/teammate at work is turning 30 tomorrow and poor Katie always gets shafted on us celebrating her birthday because its right when school starts.  In effort to make her birthday a little more special I decided that I would make her birthday cupcakes using Grandma's special recipe... and of course with Caleb's help too (don't worry Katie, he didn't touch the batter until we were done with it, he just put the papers in the pan).

Miracle Whip Cake
2c. flour
1c. sugar
3-5 tbsp.cocoa
1/2tsp. salt
1 1/2tsp. baking soda
1c. miracle whip
1c. hot water

Mix the dry ingredients together then mix miracle whip & hot water.  Add to dry ingredients and stir.  Bake for 25-30 minutes at 375.

It's not as sweet as most cakes, but it's pretty tasty!!

Mom was a good cook that is for sure Jennifer! To bad she isn't around to enjoy Caleb and all the other great grandkids! Grandkids too! But her chocolate cake was a favorite of all the kids! Glad you are using some of her recipes! Love you!
